EXECUTIVE CHEF / KITCHEN SUPERVISOR

College Fresh, Inc. is a food service provider for fraternities, sororities, and college dorms across the U.S. Our specialty is providing freshly made, delicious food along with the best client service in the collegiate food service industry. 

We are currently hiring an Executive Chef/Kitchen Supervisor. This is a full-time, year-round, salaried position, with an expected start date as soon as possible. This key position will be responsible for the entire food service program of their cafe/kitchen at a large dormitory on the UCSB campus. Previous collegiate food service experience is required!

Purpose and Summary:

Responsible for the entire food service program of assigned Cafeteria/Kitchen, as a direct outreach of College Fresh's vision and goals fresh, made from scratch food and outstanding customer service.

 

Essential Functions:

Develop and post the weekly menu for assigned Cafeteria. Submit to menu sharing system in advance as directed by management to ensure maximum quality, presentation, variety, and fresh, local/world cuisine.

Direct and participate in the ordering, stocking, inventory, and preparation of all foods on the menu; maintain kitchen and all food service areas in accordance with public health guidelines and the highest/freshest quality levels.

Maintain safe, secure, and sanitary facilities/environment by establishing, following, and enforcing sanitation standards and procedures, complying with state and local health and legal regulations, etc.

Manage and track all budgets/expenditures to meet/exceed financial budget goals and expectations. Keep complete and legible copies of all receipts for purchases made on company VISA card by utilizing the company expense tracking system (i.e. Expensify).

Create, maintain, and post the weekly staffing schedule for assigned location within established labor budget parameters, to ensure proper coverage and maximum productivity.  Post staff schedule in assigned location a minimum of one week in advance. 

Maintain a strong presence, motivational and leadership role with all staff at the assigned facility, including working in the kitchen and dining room alongside front and back of house staff frequently and as necessary.

Ensure that all College Fresh policies and procedures, as well as all state and local regulations, are enforced daily.  This includes the creation and maintenance of checklists/logs such as temperature control logs, opening and closing checklists, etc.

Represent College Fresh in a professional manner with client, students, corporate headquarters, Tropicana Student Living staff and/or property manager on a daily basis.

Provide excellent customer service -- addressing clients' needs, requests and concerns in a prompt, professional and courteous manner.

 

Other functions:

Adhere to and support all local and College Fresh sustainability programs/requirements and objectives regarding purchase of local, fresh foods whenever possible.

Prepare occasional special event meals such as recruitment, homecoming, Dad's Day, Mom's Day, etc. as required.

Perform routine assignments such as dishwashing, mopping, garbage removal, etc., if required and/or in the absence of dedicated staff.

All other duties as assigned (as directed and/or agreed upon with Regional Manager).

 

Requirements:

Normally requires a culinary arts degree, or the equivalent thereof, and a minimum of 5 years of head chef experience in a large collegiate residential environment to demonstrate extensive knowledge of food preparation, kitchen management, menu planning, organization, and leadership.

Must be able to obtain and maintain any and all applicable licenses and certifications (e.g. state sanitation license).

Must be able to stand on feet for several hours at a time and be able to lift 21-50 pounds.  Weight restrictions may be accommodated with help from another kitchen staff person.

5 years of exceptional customer service experience.  Must prioritize customer service, provide high-quality meals, and ensure that each diner at a College Fresh managed location feels welcome.

Exceptional time management skills with the ability to work on multiple items simultaneously and prioritize conflicting needs, expeditiously handling matters proactively. 

Detail oriented with strong organization, interpersonal and relationship building skills, effectively working as part of a team.

Ability to maintain strict confidentiality of information without breech for both personnel and corporate matters.

Personal qualities of integrity, commitment and dedication consistent with the College Fresh mission and vision.   

Must have and maintain a valid driver's license and satisfactory driving record.

Must adhere to policies and procedures set forth in College Fresh employee handbook.
